Teething: the Neverending Story

I never mean to skip more than one or two days between posts but I kind of got sucked into the Bermuda Triangle of parenting-a teething baby. It's an experience that blurs the lines between day and night and soon it's, well, it's Wednesday night and nobody has any underwear and people have been having cereal for dinner and showering seems like a thing of mystic lore.

And yet, this is what mothering is about. In fact, in order to possibly save my fingers a bit of gnawing, I decided that this would be a great time to try out a teething biscuit recipe I had clipped out of something last summer when Thing 2 was only kicking me from the inside.

It's so easy, you can make it while your child is taking one of their very few naps.

2 cups AP flour
1/2 cup maple syrup
3 tbs applesauce

BUT, says I, perchance some exhausted mother in this situation doesn't happen to have real maple syrup in the pantry (because her parents aren't as awesome as mine).? Well, I tried a variation for you that looks like this:

2 cups AP flour
1/4 cup molasses
1/2 cup applesauce

Either way, this dough will be *very* thick so you will need a mixer of some sort. Let it beat for 2-3 minutes as well. Meanwhile, your oven is preheating to 300 (yes, that low) and you will need a rolling pin and some extra flour.

Roll out the dough on a floured surface into a rectangle, with the dough approximately 1/4 inch thick. With a sharp knife or pizza cutter, cut dough into 24 pieces. Then, just like you would with shortbread, press a fork into the dough at regular intervals to help keep the dough flat as it bakes.

My biscuits took only 25 minutes to get golden brown. The original recipe said 35 minutes so just keep checking yours.

Cool and keep airtight for up to 2 weeks.

NOW, I would also say for my mom friends out there that are not using wheat, although i haven't tried it yet, I do believe you could try this recipe with brown rice flour with success. You may have to adjust the moisture levels of the other two ingredients however.

And in case you think I'm the only person who looks like I haven't slept, check out the look on Thing 2's face--totally hypnotized!!
