Apple Oatmeal Cookies


Perhaps you have heard? Nashville is under water? It's true. I know because I live here. You might not have heard so quickly-the national news doesn't seem to be so concerned with this sort of thing because it's here, in our own country so there aren't going to be any babies to adopt. And it won't affect baseball season. And it doesn't include celebrities screwing each other's brains out since they serve no other purpose but filling rags with such fodder. So, in case you hadn't heard, Nashville is under water.

In light of that, I've been avoiding going to the store. There's no school because in some places there's, well, no school. And clean water is getting scarce so we've been staying home (because since I can't bathe, I really don't want anyone to see/smell me...and I don't really want to see/smell them). But none of this is a reason to do without something sweet to nibble on. And so, in light of our circumstances, I'm sharing one of those cookie recipes that uses odds and ends that are probably already laying around the house, like that last lonely apple in the crisper drawer that a little beat up.

Crank up the oven to 350, Dolly, we're baking cookies.

In one bowl, blend together these dry ingredients:

1 cup AP flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp cinnamon
1/4 tsp ground clove
1/2 tsp ground nutmeg
1 cup oatmeal

In a mixing bowl cream together these ingredients

1/2 cup shortening (gasp! or margarine--cuz this isn't a 'special cookie " that you take somewhere-this is a "must-go" cookie)
3/4 cup sugar
Blend in 2 eggs, then add the dry ingredients. To this mix in 1 cup of chopped peeled apple. If you have a cup of nuts (not relatives, nuts) throw them in too.

Bake these cookies for 12-15 minutes. These cookies are soft and cakey. You can eat more of them because they are good for you (well, more so than a hoho)..

And, if you happen to think of it, pray for Nashville.
