I know I've been giving you a lot of bar cookie type recipes but, honestly, when you are trying to whip up huge amounts of goodies, it's an easy way to get the number of servings you need. Plus, nobody said you have to cut them all in squares or rectangles, so I find they add some texture and diversity to a tray.
Today's recipe is another bar but it requires no baking and can be mixed up in one saucepan (provided your saucepan is large, of course).
You'll also need a 9x13 pan that you have sprayed lightly.
Other than that, here are the ingredients:
1/2 cup butter
12 oz. chocolate chips
1 cup butterscotch chips
1 cup peanut butter
4 cups rice krispies
3 cups mini marshmallows
....pretty much every flavor but some healthy fruit, eh? Oh, and if you change the butter to margarine and watch what kind of chocolate chips you use, you can have a dairy free/egg free treat.
In your saucepan and over medium heat, melt the butter, chocolate chips and butterscotch chips together. Stir quickly and watch your heat so you don't scorch the chocolate. Stir until completely melted together. Cut the heat and add in the peanut butter, stirring til it melts before adding in the marshmallows and rice krsipies.
When the cereal is coated, scrape everything into the prepared 9x13. Use a bit of waxed paper to press the goop into the corners and flatten the top. I thought that while it smelled wonderful, the top needed a little "something" for contrast so I sprinkled a little more cereal on top and pressed it in lightly before chilling the pan.
Cut and serve.
