"Marry Me" Chicken Salad

Having started baking at home when I was younger, I knew that the way to a man's heart was, indeed, through his stomach. Apparently, though, with the right combination of goodies, you can actually bring a man to his knees (in a good way). For anyone who is wondering just how I managed to get Mr. Devilin to make me Mrs. Devilin, I present to you the chicken salad I made the weekend he proposed (October 9, 1999).

4 boneless, skinless chicken breasts, cooked, cooled and chopped (*or feel free to use one of those rotisserie chickens from the store)
1 green pepper, chopped
1 small red onion (WHY is it called a "red onion" when it's purple?), chopped fine
1 cup black olives, chopped (you're seeing the trend here, right?)
2 cups shredded cheddar cheese
mayo to taste (I like LOTS of mayo but I'm gonna die soon, I'm sure. You might not like so much....I don't understand that, but whatever...)

Throw it all into a bowl and mix it up. Chill it a bit and fill some pita pockets or toast some croissants and enjoy....or, you know, eat it out of the bowl with a spoon as I often do.

Yes, ladies, this simple salad stuffed into some homemade pita bread and The Devs was my love slave for life....poor fool!

Love me some mayo, and I crave chicken like I'm prego, and this one is easy enough that even I can handle it!

This looks yum-yum-yummo! I love chicken salad.....and I was doing that thing that Aunt Patty used to do........taste the ingredients while she read them and visualized adding them to the bowl. I need to look in the freezer and see if I can locate some chicken. After you kids left, Dad decided that he didn't like chicken anymore. He announced it about five years after everyone had gone. Oh....by the way....I hate chicken....I thought he was channeling Grandpa Boor. I think it's an army thing. No fun cooking if the only other person in the house doesn't like it. I'm already married to him, but I bet I could get him to eat this. I'll let you know.....

I keep thinking about how often we ate chicken too-poor guy!! It's nice to finally get to say what you actually like or don't like though! I have another one I'll post soon that is more of a honey mustard/curry that I constantly crave--I think you'd like it.
