Sometimes I find a cookie recipe that I intentionally don't make because they turn out so yummy that I eat more of them than I should. These cookies fall into that category. But if you are looking for a tart little number for a shower or wedding tray or need a little bit to nibble with your tea, make these.
You'll need to mix and chill the dough before you need to turn on the oven. So, in your mixing bowl, blend together the following:
1 1/2 sticks of butter, softened
1/2 cup of sugar
1/2 cup of powdered lemonade mix (the kind with the sugar in it--like Country Time)
1/2 tsp salt
Blend until fluffy.
In a small bowl, whisk together
1 egg
2 tbs light corn syrup
1/2 tsp lemon extract
Add this to the butter/sugar mix and incorporate.
In a separate bowl, blend together
2 cups AP flour
1 tsp baking powder
1 tsp baking soda
Now add this to the mixing bowl and blend until all is mixed. Cover the dough and chill it for at least an hour.
Preheat the oven to 325. In a small bowl, mix together 1/2 cup of sugar with 2 tbs more of the lemonade mix. You'll be rolling the cookie dough in this before traying it.
The cookies spread a bit so you want to pinch off 1 inch balls of dough. Keep them small. If the dough becomes too sticky when you are rolling it, chill it for a while again.
Roll the dough in the sugar mixture and pan. Bake for 7-9 minutes until golden around the edges. Once these start to brown, they brown quickly because the sugar caramelizes quickly on the top. Let the cookies finish baking a bit on the pans before removing to cool on waxed paper or a cooling rack.
Make sure you store them with paper in between the layers so they don't stick together....if they even make it to the container.
